Great work with the Aston! The black metallic is the best paint IMHO they have. I unfortunately have the fast track "Jet Black" for my DB9. But I wasn't going to pass up an extremely rare manual DB9 just to get a slightly different paint. If the above are your steps in order, you should be able to go from the Menu FG400 straight to the SF3800 and then top it off with the Essence if desired. If coating then yes, I would hit that last step. The FG400 should finish down perfectly enough to not use the SF3500. But, you also may not see a difference between the 3500 and 3800. Aston paint is definitely finicky.
Mine is a 05', so that was before Aston robotized the painting process, so every panel on mine acts differently and takes different pad polish combinations to get it right.
But congrats to you for diving into this great skill set. I am talking through several AM owners on their forum on how to do this themselves. This is a great testimony to those who want to try.
