I have actually been thinking about putting a coating on it. Do you think a coating my offer some protection from rock chips?

No. Coatings, just like waxes and sealants won't stop the impact from something hard and sharp like a rock from damaging paint.
A plastic film or wrap would or you could always "Dip it" using Plasti-Dip.

There's going to be more than one product, but the one I'm referring to specifically I've already used the pre-production version on a couple of garage projects and the final production version is very nice.
