It's something my Mum has made at Christmas for as long as I can remember. Basically it's boiled eggs, halved, on a plate covered in a half and half mix of sour cream and mayonnaise, with a dash of tomato sauce (ketchup over there I guess) and worcestershire sauce added for flavour, and sprinkled with smoked paprika. If she makes nothing else, she has to make this, everybody loves it. She just calls it the egg dish, but I googled it and that's what I found, it's often served on lettuce with cherry tomatoes, but we have it with various salads, so we just have it basic.

Made pineapple fried rice with chicken from Jet Tila's Thai cookbook. It's my girlfriend's go-to when we go out for Thai. Well received with the comment that it lacked cashews, which one of the restaurants we frequent includes. So next time, they'll be added.

Some tips that I found work well. Use jasmine and don’t add as much water as normal. Store a day or two in fridge. Fried rice comes out great.

I did use Jasmine. I'll try less water and keeping it in the fridge longer if I can.

like mentioned....dry rice for fried rice....2-3 days in the fridge makes for good rice

Updated with fried cashews and less water making the rice. Rice package called for 2:1 and I made it with about 1.5:1. Got a few hours in the fridge but not enough planning ahead for 1+ days.

Looks good and less water was a good idea. You should let it set 2 days,
