I think the answer to your question (valet vs detailing) is highly dependent on your clientele.
What you call valeting, may also be called production detailing. For the average person, that wants their car clean and shiny, a quality production detail is completely acceptable. Though you will likely be more than 2 hours even on a quality production detail.
For high-end detailing, you may spend 2 hours just washing and decontaminating the paint. Then another 4-12 hours in paint correction and another 2-4 on the interior.
Obviously these numbers are subject to many factors.
There are no strict qualifications for Valeter vs Detailer, but you'll know it when you see it.

paint work is the area i'm afraid to advertise beyond a basic restore job :/. i have a mate who works in a bodyshop and has offered to show me the step up from a simple compound buff... first step of the journey

off to work with the palm sander... bring on the sand!! also have a pumice stone to try for pet hair, I've just been using a rubber brush

well I tried the pumice stone on pet hair.. yeah it works but found it lifted alot of the fiber from carpets. a hacksaw blade also helps but same issue lifting fibers.
