Great answers, thanks all.
While turning around a couple of older beaters for a friend, I came across the infamous cream-coloured VW pleather. The previous owners had neglected it and the only real solution would be replacement or reupholstering the seats. But that's not an option on a $2000 (otherwise solid) daily driver. So, disregarding the largest cracks and wear, how does one remove the black grime embedded within all the cracks in the PU and base leather? On dark seats it would almost be disguised as patina, on white ones it just looks gross.

I've tried a bunch, too many to list actually. One kit that is worth looking at that has both a cleaner and a lasting coating, and isn't crazy expensive is from Meguiar's.
Question, how much do leather seats cost? Just like taking care of the exterior, you get what you pay for. If it costs $5-$10 bucks to maintain your leather seats annually, say with investing in Leatherique, is that truly to much to spend?

The 16 ounce can of Leatherique is $70 (plus shipping) and if you follow their instructions you will use one whole bottle on your interior!
Now you won't use the whole bottle of both products but one product will be completely empty at 4 ounces per seat.
So yeah, I suppose if you only put it on once every 7 years that's $10+ a year. But if you are doing it once a year it'll cost a lot more than even coatings do.

Hi, I would steam clean the seats to get the grime out using a steamer with a towelling head and change the towel frequently!
Leather treatments I would suggest are pinnacle black label cleaner and conditioner or mothers reflections cleaner and conditioner as both are excellent but at different price points!
Mike did an article about cleaning the leather interior of an old Ferrari and since then I swear by steam and white towels! I used 10 towel heads to clean a vw Passat and it looked awesome afterwards! (Shame customer was a total ass who complained I did not fix his curbed alloys, explained before the job I can only improve what is there but alloy refurbishment is A specialised task and recommended a really good guy)

I prefer Leather Master Protection Cream. It makes the seats feel very natural (high end cars have leather thats soft and grippy) and has ZERO sheen. If anything it actually mutes any natural sheen the leathers protective coating creates.
I dislike any conditioner type product that tries to replicate a leather scent. I never find any to match the actual oem leather. And the ones that try, try way to hard. They typically overpower the interior with gaudy scent in my experience.
The M5 and E63 (both 2013's) I detailed the past 2 years both have a waxy type leather scent that Ive never seen replicated in a product. And if you cleaned the seats with a clear product (like blackfire interior cleaner), the waxy smell would reveal itself again. I would follow up with protection cream. It just never sat well with me to overpower the interior with something like Pinnacle or chemical guys conditioner. they would change the sheen, feel and color of the high quality leather.
