What do you protect the actual metal wipers with (not the blades)? Would it be better to use protectant or wax/sealant?

I think as long as you're protecting it you're good. I have seen both waxes and protectants such as 303 on the wipers work well.

Wipe arms with spray wax weekly after washing, and coat painted area while waxing/sealing.
