Is the wiper chatter something that would be experienced during cold season specifically, or any time? My wife has her windshield coated but haven’t experienced this yet. Coating was put on in February so I guess we have some winter hours logged, but no chattering that I’ve noticed from then to now.

I can't speak about windshields as I don't mess with them to prevent issues with wipers.
As for the paint, I found the salt and winter road grime sticks to sealants and coatings equally. The big difference is the ease of removal. Going through a touchless car wash or spending a few minutes in a coin-op wash bay with a pressure washer will get my car far cleaner with a coating than a sealant. Since I don't have a heated garage, I honestly don't worry about getting my car perfectly clean in the cold winter months.
One thing with a coating I didn't experience with a sealant was the beading/water sheeting appearance on the lower door pannels and rear hatch degrading through the winter. This appears to be grime embedded in the coating which will go away with a few washes and/or a light claybar session. After a few washes it will come back good as new.

For glass, I've used IGL Window, Polish Angel Rain 9H, Gyeon View, Aquapel and 4 other non-AGO glass coatings. None have had any wiper chatter.

No wiper chatter with the PBL Glass Coating and Bosch Icon wipers or Michelin Wipers.
I also used the McKees 37 Anti-Frost in the washer fluid.
Windshield stated and clean last winter.
