Does the iron remover strip sealants or wax? Is it safe to use on a detailed car or should I only use it before a detail job?

It might not strip but will probably degrade it. I would save the iron remover to use it only before you apply the LSP again.

Can't say for sure, but I'd think the same. I'd expect some degrading of the wax and would only use iron remover prior to applying new layer of LSP (or polishing, etc)
