Sometimes it can work with nitrile gloves and just mop together them or even better following with the vacuum. Some hairs though almost is like an anchor in the cloth seats and mats. Pumice stones says to be great for this and also the pet hair remover rubber brushes. So maybe have both at hand and see which works better on the type of hair you are dealing with. And try with the nitrile gloves as you notice fast when the hair don't releases and you get a better grip to pick them out. It's PITA with some kind of fabrics and hair types.
