Texas BBQ...anything and everything that moves can be "BBQ"! We use lots of dry rubs to flavor the meats as well as smoking it with mesquite, pecan, cherry, etc...instead of grilling, there are acceptable ways to grill some food such as sausage links, shrimp, fish etc, just throw some good mesquite or your favorite rub on it and cook!
Sauces are there for accents but not intended to smother it. Most sauces are tomato based (not vinegar) as well as having garlic and other spices and can "stay with you" for a couple of hours after eating...burp and you get the joy or re-tasting the sauce!!
One of the sauces I use is the standard sauce from Goode Co, a Houston institution as well as their Mesquite rub is outstanding too
Another Mesquite option is from Fiesta that you can find at most grocery stores.
Again...Im speaking in general terms.
Man, thank you for this post! Great summing up of two very well known polarizing styles.
I can remember being a kid loving KC style, lots of thick heavy sweet sauce, and more on the side to dip! Big messy ribs, chicken and pork chops.
Now though, KC isn’t so much my first choice, but I’ll eat it don’t get me wrong. After having real smoked meats, I love Texas BBQ.
Don’t hate me for this, but I still love pulled pork, although not slopped full of sauce, a nice drizzle of it is all that’s needed.

A few weeks or maybe a month ago now, I gave Paul a hard time about him liking Chicago deep dish pizza, knowing damn well he’s a New Yorker and wouldn’t let that go. It’s been a good light hearted bantering since then and I’m so happy for that!
Although, at this point now, quite a few threads have been jacked! Not wanting to be a nuisance but I’m all in favor for it.

I like how this thread turned wholesome. I had to go 4 pages back before realizing my confusion wasn't due to my glue sniffing habit.
The best way to get revenge? Teach them how to detail. They'll spend the rest of their life worrying about the condition of their car.

I park my little Miata with less than an inch between my tires and the curb leaving about 18-24 inches from the yellow line separating the parking spots... Somehow people will still manage to park a good foot inside of the exact spot I’m parked in.
