Breakfast eggs, usually scrambling with cheese/salsa but sometimes cooked or hard and coffee with cassava milk Lunch is either a kind of salad (I'm actually adding black beans/corn/salsa/chicken and Greek yoghurt to the taco salad right now) or sushi if I feel like my bag. Occasionally soup.

My wife made Beef Tenderloin, mashed potatoes, and green beans w bacon as our last dinner of 2021. My daughter also made empanadas. I’m going out of 2021 happy.

Hard to beat beef tenderloin.

I dry rubbed some pork tenderloin and smoked them on my pellet grill until they hit 145° and then pulled them off and let them rest for 30 minutes.

Very good, very tender.
