What kind of effect does Scotchgard or the other good fabric protectors do against this type of salt & grime? Does anyone carry around a small brush i.e. a Tuff Shine Tire Brush in their car to brush their shoes off before getting inside? That was my 1st thought... I dunno if I could live with myself if my car ever got to this point. Lol. J/k
But seriously, does fabric guard help against that type of stuff?
Winter mats. Weathertech or IMO, the better route, are the far cheaper and better quality clones available today. I actually don't even put carpeted mats in our vehicles, I run winter mats all year round.
Salt is removed using an extractor and some rinse agent (low pH product). The above looks bad but it's not a problem. That can be removed pretty easily. Mats I simply power wash.

So what do you do with your matts? You seriously Never have them in?

I keep them in my garage. LOL! On a rare occastion that I would travel with my boss, I spiff up the car and would put them inside. Once I trade or sell the car, I sell the accessories. I have a full set of carpeted mats for my Inifiniti and my wife's Lincoln for sale now. I use the rear mats from my Audi under the winter mats in my sons car to help act as a cushion / insulation. LOL! I just run the all weather winter mats year-round.
Here are the ones in my sons Corolla

Ric, consider yourself lucky that you don't have to deal with this! I've been here 10 yrs and went through these Polar Vortexs TWICE!! The above one lasted 3 days in a row and when it reached above 0 you could feel the difference. Let that sink in, going slightly above zero is a DIFFERENCE.
Doppler Mazda showed its temp at the gas station that morning. It was a little below 1/2 and I filled it up and getting back into the car my pants were frozen and it stung my legs. The defroster in my work van couldn't keep up at a light, crazy days!

Mazda 6 dash? Looks just like the 07 Speed6 I had.
And I agree, polar vortex in midwest can be brutal.
Not as bad as some places further north (Canada), but still can be pretty bad.
