So it looks like 'Flat Pads' aren't really available here in Aus :/. Closest being either cyan, Tangerin & Crimsons Hydro-tech pads. Alternatively there's the HD Pads too Pads ... has anyone used? How would they compare to LC ?

Are the LC Thin Pro Pads available?
I used a couple a few weeks ago and really liked them. As my Flat Pads wear out, I'm going to start replacing them with the Thin Pro's.
No LC Thin Pro Pads either :(. Some stores stock the Shine Mate flat pads though https://www.waxit.com.au/collections/car-buffing-pads , not sure how they compare to LC, though they only come in 4" / 6" / 7" ... I've only got a 5" Backing Plate, would 6" pads still work ok or best to stick with 5.5" and no larger ?
Ultimate Polish doesn't suck. IME alot depends on what kind of conditions you're working in... If I'm working in the sun or in high temps it tends to be a bit of a pain to wipe off.
But if working in the shade or even better in the shade in cool temps it's a breeze to work with and provides great results. I especially like that it contains a bit more polishing oils which make that extra slight difference on darker colored vehicles.

Make sure to keep it off plastic and rubber trim.
I don't think I've used a HD polish yet that was easy to wipe off. You can wipe over it and nothing comes off. Its like you need to break through the skin of the polish first then it will come off. Its unlike any other polish I've used in this regard. I've never understood all the excitement about HD polishes so never tried the AAT ones. I do like SPEED AIO though.
