What are you going to be using an air compressor for?
Will it be used in a "continuous operation"?
Sizing an air compressor:
Usually what I do is to take the tool(s) that's uses the most CFM's,
and then multiply that number of CFM's by 1.5.
EX:
CFM's of an air operated drill-motor = 12;
I size the compressor to 18 CFM's.
Sure I may be over-sizing an air compressor's capacity by doing so, but under-sizing
the compressor a person purchases may bring greater downtime in the long term.
JMO.

You may as well get one that'll handle more than that.
Cleaning pads on the fly; running an impact wrench for
tire/wheel assemblies' removal/remounting; etc.
You won't be sorry.
Then again...
There are a lot of wet/dry vacuums that have a "blow mode",
(that lists for a lot less money than many compressor's price-points),
that can easily handle the two tasks you have listed.

50 to 60 psi is a safe number for that.
EDIT:
Wait, are you asking about buying an air compressor or do you already have one and you're just looking for a nice number to set it at for blowing out interiors?

30 gallon 200 psi is what I have and it's good but for drying off cars I'd buy a blower/vac from sears for around $120
