Anyone have an idea as to what can be done/used to remove these scratches on the rear console cover?

Take it to a detailer that does interior repair and see what he has to say.

My mom has a ton of deep gouges in the pillar of her miata where her ring drags against it as she gets in and out. They are a little deep to polish; eek!
