First question:

Will one tube of Opti-Coat 2.0 be enough for a first time user to cover a full size truck with an 8 foot bed, specifically my F-150?

There is a lot of real estate to cover

Second question:

Would Opti-Coat 2.0 be a good choice for my style of daily driver maintenance?

I usually only polish the truck once a year in the spring and then I basically just do a once a week wash and dry/spray wax, followed with daily wipe downs with Quik Detailers too keep it looking new if the truck is only lightly dusty and it has not rained.

You should have more than enough to do the paint, glass and wheels. If you decide to do the bed cover and inside the bed, then maybe, maybe not. You'd be surprised how little you need.

Brian, I completely agree. It takes very little and is an incredible product.

Brian, I used less than 10cc to do two cars and a set of wheels, one tube will be plenty. After priming your pad with an x, you only need 4-5 drips at a time, reloading only when product is no longer applying to the surface.

when you guys say you do the wheels does that include the barrels?

And if so, would use of a daytona brush scratch the coating off of barrels...

or perhaps once the coating is on, there is no need to scrub the barrels anymore?

Once you use it it makes a lot of sense. It is a super thin liquid, and you only apply what amounts to an oil-thin film on the paint. 5-6 drops will cover half a door panel.

I only used 5cc to coat an entire BMW M3's paint, glass, wheels and door jambs.

Like LegacyGT said, once you use it, you'll understand why so little is needed.
