The 3M Professional Finish ( have enough for one more car) label says to remove immediately after application, which I have been doing a panel at a time.

Label:

No need to wait for a haze like a traditional wax - wipe on & wipe off instantly

However, the help video here and the product information site here says to allow the product to dry to a haze before removing.

Which is the proper application technique? Is the rule of thumb in this industry "always follow manufacturers specifications?" Or.........

The finish looks awesome. But I want to make sure I'm not wiping away too soon.

Thank you,

If the finish looks great and the label says to wipe it off right away, I'd stick with that recommendation and not worry about it.

If they say wipe it off immediately, that's usually for no other reason that their product possibly being hard to remove. I would remove immediately if that's what the recommendation says
On sealant I definitely wait at least 30 mins.
When I do carnauba wax, I usually do a panel at a time and remove as soon as I covered the area...
