What do you use for a carpet / fabric protectant? Is Scotchgard what everyone uses, or are there some good alternatives?

303 Fabric Guard.
I've used it on fabric seats and soft convertible tops but not on carpet. Impressive results for sheading water.

I don't use anything, I just keep cleaning the fabric seats on the Subaru, as well as the carpets on both vehicles.

303 fabric guard. I can actually say this stuff works. A week or so after applying this, I spilled a half cup of coffee all over my car. The coffee didn't seep into the carpet/seats at all, it beaded and floated ( hard to describe) above the surface, it made for an easy clean. :) definetely a great product.
