The Cockpit Sealant is a sealant that cross-links and cures, the other is just a dressing.

The Cockpit Sealant is a good product, but I find it works better on surfaces that are in good condition--it's not going to darken/restore surfaces that have UV faded, at least not in my experience.

In my experience, the vinyl/rubber protectant is very similar to aerospace 303. Leaves a slight sheen/darkening effect, but still relatively light for a dressing. Good longevity.
The cockpit trim sealant doesn't change the look of surfaces much at all (on my truck I couldn't even tell anything was applied- before and after was identical).
