I hear you on this. It's why I've bought less and less products over time. I have WAY too much stuff!
I'm a bit of an oddball, judging from all the posts
My three (for chemicals):
- Poorboy's World
- Blackfire
- Griot's
My Blackfire line up has been expanding, and as much as I like Megs, I'm using it less and less
I don't have a ton of Griot's stuff, and don't expect to down the line. But what I have tried, I'd feel confident in most of their products.

Griot's and 3D. That covers pretty much everything.
Like everyone else, I use many different brands.

Re: If you could only use two or three product lines for all your detailing needs, what would you choose?
I’m used to go with Mckees in these threads, but due to my support of PBMG, and quite frankly trying these new products and looking at their prices, I’m going to switch to the new DP as my most extensive favorite. And I suspect they have more coming and gallons coming... on an uprise.
Detailing Products (DP)
Polish Angel
Wolfgang
Note that I always have had a special place in my heart for Pinnacle and PBL (these two got me really wanting to explore top tier products), but WG has surpassed them due to their new ceramic additions (and they were previously neck and neck anyways with DGPS, Fuzion, etc.). Ceramic additions I really like include SiO2 Paint Sealant, the SiO2 wash and the SiO2 waterless wash)

CarPro - Too many standout products to not be at the top of my list.
Griots - I'm big on all their newer stuff I've tried.
McKees, Meguires, or Optimum - All three have more than one specialty product I would want to have. I'd have to think hard about which would fit in best with the other two.

I'm a big fan of Griots, Bilt Hamber and the final one would probably be between Meguiars or Adams.
CarPro has many great products but they're a bit pricey here.
