The best sealant for black
1. I have a new Ford edge black metallic, I am looking for the best sealant performance.
2. I am also wondering which leather protection is best for the interior.

Menzerna Powerlock, Wolfgang Sealant and Blackfire Sealant. Any of these 3 IMO are great. You cannot go wrong with any of these 3. Take your pick....all are equal in my book. Some may have a different opinion, however, it would be compared to splitting hair.

Welcome to AGO.
By performance, do you mean which will last the longest? Generally speaking, the "best" would be a coating, the next best a sealant, and the least effective a wax. I've always been a Meguiar's user; their Ultimate Wax (which is actually a sealant) is very good. It is inexpensive and is sold just about everywhere.
Before you put any protection on, you should make sure the paint is prepared for it. Even though your vehicle may be new, there is a good possibility it has contaminants imbedded into it. Do the "baggie test" and make sure the surface is butter smooth. Hopefully the dealer did not install any swirls into the paint, because then you would also need to polish before proceeding with protection.
I'll leave the leather recommendations to someone else.

I've used Collinite 845 on my black pearl VW and it looks amazing. It isn't a sealant, but has the same durability and ease of use.
However, like trekkeruss alluded to in his comment above, having a clean swirl-free surface to work from will get you the maximum potential from any product you choose.

I use Wolfgang DGPS3 on my Coupe... it's black metallic and it looks great
Also love this because it's very easy to apply/take off.

Wolfgang Deep Gloss Paint Sealant, easy to apply and easy to take off and lasts for ever.

If you are sure that you have your vehicle cleaned, decontaminated, and polished to your expectations
(these steps will really make the metallic paint "pop")...
Then, apply:
Finish Kare #2180 Ultra Polymer Sealant.

Menzerna PL, topped with Collinite Marque D'Elegance, really good for black cars.
For leather, besides the usual picks like Lexol, I've been using Scholl Concepts Skin Premium Leather Gel, 9.99$ for 250g at AG.
